Bologna, the fat city: local specialties and traditions

An exciting gourmet tour focused on the colourful Food Market, located in the charming medieval quarter of the city.

WHEN: Preferably from Monday to Saturday (in the morning, if possible)

We will discover the ancient origins of the Bolognese cuisine and of local and regional specialties: Mortadella, Parmigiano Reggiano, Aceto Balsamico Tradizionale, the "sfoglia", that is egg pasta which is made thin using a rolling pin (tortellini, tortelloni, tagliatelle…), chocolate…We will tell you traditions and funny stories about Bologna’s wine and food products pleasantly walking in the main square, piazza Maggiore, and visiting a number of historic stores where you can try typical food matched with a glass of Pignoletto (white sparkling wine) or Sangiovese (red wine).

After a detailed visit of the ancient food market, let’s have lunch in a typical eatery or in the oldest “osteria” of Bologna with what we have just purchased in the stores or stalls. In the afternoon the tour continues in the key places of ancient Bolognese trade (Palace of the Merchants, the wooden porticoes, the Towers…), culminating in a short pasta-making demonstration followed by a taste of local meat products, cheese and bread near piazza Santo Stefano. Alternatively, in the afternoon you can join a cooking lesson held by an experienced “sfoglina” who will reveal you all the secrets of the Bolognese cuisine.
